Made with simple whole-food, plant-based ingredients and naturally sweetened with ripe bananas, these "cookies" are really more like a portable bowl of banana peanut butter oatmeal.
Rolled oats provide satisfying fiber, peanut butter adds plant protein and healthy fats, and chia seeds contribute even more fiber and omega-3 fats—all working together to help create a breakfast that keeps you feeling nourished longer.

Banana Oat Breakfast Cookies Recipe
Makes: 16–18 cookies
Prep Time: 10 minutes
Bake Time: 15–18 minutes
Ingredients
2 medium ripe bananas
1½ cups rolled oats
½ cup unsweetened peanut butter (or your favorite nut or seed butter)
2 tablespoons chia seeds
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
Pinch of salt
Optional Mix-Ins (choose one):
¼ cup cacao nibs
¼ cup chopped walnuts
¼ cup chopped pistachios
¼ cup pumpkin seeds
¼ cup raisins
¼ cup chopped dates
Directions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Mash the bananas in a large bowl until mostly smooth. Stir in the peanut butter and vanilla, then add the oats, chia seeds, cinnamon, salt, and your favorite mix-in. Mix until well combined and let the mixture rest for 5 minutes. If the mixture feels too dry to hold together, stir in 1–2 tablespoons of unsweetened plant-based milk.
Scoop about 1 tablespoon of the mixture onto the prepared baking sheet to make 16 cookies.
Gently flatten each cookie with the back of a fork or spoon since they won't spread while baking.
Bake for 15–18 minutes, or until the cookies are set and lightly golden around the edges. Let cool on the baking sheet for a few minutes before enjoying.
